The Rabbi & The Chef - Cinnamon Buns

Cinnamon Buns Recipe: 4 3/4 to 5 1/4 cups unbleached all purpose flour 1 tsp active dry yeast 1 cup milk, water or soy milk 1/3 cup margarine 1/3 cup sugar 1/2 tsp salt 3 eggs 3/4 cup brown sugar 1/4 cup all purpose flour 1 tbspn cinnamon 1/3 cup margarine 1/2 cup raisins 1/2 cup pecans Vanilla glaze: stir together 1 1/4 cups icing sugar 1/2 tsp vanilla add enough water or soy milk to reach a drizzling consistency in a bowl combine 2 1/2 cups flour and yeast. In a saucepan melt together water or soymilk, 1/3 cup margarine, sugar and salt, just till melted and warm and margarine almost melts. add to flour mixture with the eggs. Beat with a mixer or by hand until dough forms. Turn onto a floured surface. Knead in enough flour to make a relatively soft dough. place into a greased bowl, cover and let rise in a warm place until doubled. punch down dough and turnout onto a lightly floured surface. cut dough in half and roll each half into a 12 x 8 " rectangle. for filling stir together brown sugar, raisins, 1/4 cup flour and cinnamon; cut in 1/3 cup butter or margarine until the mixture resemble coarse crumbs. sprinkle filling over dough rectangle. Roll each rectangle starting from the long side. Seal seams. Slice roll into 12 pieces. Place cut side down into prepared pans or baking sheets. cover dough loosely with plastic wrap and let rise till doubled in size. Uncover and bake in a 375F oven for 20 - 25 min. or until light brown. Remove from oven. Cool 1 minute, carefully invert rolls onto a wire rack. Drizzle with vanilla glaze. serve warm.
