TIRAMISU FOR THE SPONGE CAKE 8 eggs 12 oz sugar 6 oz vegetable oil 12 oz flour or g/f flour ( I used KinnickKinnick) 2 heaping tsp baking powder 1tsp vanilla Beat eggs for 20 min on medium speed. Add sugar beat another 5 minutes. Add oil in a small stream always beating for 30 seconds. Sift flour and baking powder and fold into batter. Pour batter in a greased tubepan and bake 1 hour at 350 degrees. CUSTARD & MASCARPONE 6 egg yolks 3/4 cup granulated sugar 2/3 cup milk 1/2 tsp vanilla extract You will need 1 container 475 grams of mascarpone In saucepan place egg yolks, sugar, vanilla and whisk over medium heat gradually add milk continue stiring constantly until mixture comes to a small boil continue cooking 1 minute cover with saran wrap and put in fridge minimum 1 hour. When custard is very cold and when ready to assemble cake whisk mascarpone into custard add 2 tbsps whipped cream put aside. ESPRESSO prepare 1 1/2 cup espresso add 1tbsp sugar and 1/4 cup dark Rhum. Let cool WHIPPING CREAM 473 ml container of 35% whipping cream 1tbsp icing sugar 1 tsp vanilla In bowl beat all ingredients at high speed until stiff peaks form TO ASSEMBLE CAKE Cut cake in 3/4 inch slices. In 10x10 dish or pyrex place 1layer of cake slices. Drizzle layers of cake with espresso. Spread half of custard on top. Then spread half of whipped cream on top Then start again layers cake, drizzle coffee, custard and finally whipped cream. Sprinkle cocoa powder on top et voilà Enjoy this amazing dessert 😋
