Black Pepper - The most important spice in the world
Black pepper, commonly referred to as simply ‘pepper’, is a climbing vine of the family Piperaceae known for the spice made from its fruits. Native to the Malabar Coast of India and is one of the earliest spices used by man. Widely used as a spice it also has a limited usage in medicine to relieve flatulence and as a stimulant of gastric secretions. Widely cultivated in the tropics of Southeast Asia. Later in history pepper became an important commodity for overland trade between India and Europe. In the Middle Ages the Venetians and the Genoese became the main distributors in Europe, with a virtual monopoly of the trade. The fruits are picked when they begin to turn red. Collected and immersed in boiling water for 10 minutes, turning them dark brown or black. Then they're spread out to dry in the sun for a few days. The peppercorns are then ground to black pepper.
