Lazy Russian Dumplings

Lazy Russian Dumplings Recipe – an easy homemade dumplings recipe with ground beef, onion, and garlic, inspired by traditional Russian pelmeni. This video shows step-by-step how to make lazy Russian dumplings, also known as lyenivye pelmeni. They are often presented as a faster alternative to authentic Russian pelmeni, but do they really save time compared to classic Russian dumplings? Let’s find out together! Ingredients (for lazy Russian dumplings / ленивые пельмени): 1 lbs (454 g) ground beef – perfect for meat dumplings and comfort food recipes 1 large onion, finely chopped 2 cloves garlic, pressed 2 tsp salt (or to taste) 1 tsp freshly ground black pepper (remove large pepper pieces before mixing) 2 eggs 4 tbsp milk Flour for coating (may need more during the process) Bay leaf, salt, and whole black peppercorns for boiling water Instructions (how to make lazy dumplings / как приготовить ленивые пельмени): Make the filling: Mix ground beef with onion, garlic, salt, and pepper. Stir thoroughly for 5–7 minutes. Let rest 15–20 minutes for flavors to blend. Prepare coating: Beat 2 eggs with 4 tbsp milk until smooth. On your work surface, make a small hill of flour (мука для панировки). Shape dumplings: Form small meatballs (I used a ½ tbsp measuring spoon). These will become the base for Russian-style meat dumplings. Coat: Dip each meatball into the egg mixture, then roll in flour. Repeat 2–3 times for a layered coating that mimics dough. Cook: Bring water to a boil with bay leaf, salt, and peppercorns. Drop dumplings in and cook for 4–5 minutes once they start boiling. Serve: Traditional Russian way is with sour cream (сметана), but you can also add butter, ketchup, spicy mustard, or salsa. My Verdict (отзыв о ленивых пельменях): The process doesn’t save much time compared to making authentic dumplings. The dough-like coating doesn’t have the same texture as real pelmeni. Personally, I prefer classic Siberian dumplings (пельмени по-сибирски), which I’ll show you in another video.
